This vegetarian entree keeps and reheat well with a little help. Try adding low fat or fat free cheese, low fat plain yogurt, or low fat sour cream the second time around to prevent them from drying out. The beans are best when re-fried, so go back to steps 5 and 6 to reserve.
Ingredients for making Low Fat Refried Beans:
1 lb dried pinto, kidney, or black beans OR 16oz can of pinto, kidney, or black beansGarlic clove (optional)2 Tbsp olive oilDash chili powder, Adobo spice, fahita seasoning and/or garlic salt to taste for pinto beans or kidney beans; cilantro, Adobo spice, and garlic salt for black beans to taste.Salt to tasteHandful low-fat or non-fat shredded cheddar cheese (optional)Dollop of low-fat sour cream (optional)Tbsp salsa (optional)Directions for Making Low Fat Refried Beans
If using canned beans, skip to step 4. If using dried beans, begin here. Rinse dried beans in colinder and discard any damaged beans and other sediment. Place the edible beans in a large bowl of cold water and soak overnight or for six hours or longer.Drain and wash beans. Place in clean pan filled with water and a garlic clove and boil until beans are soft new jordan 2011, 30 minutes or longer.Let beans cool. Remove garlic clove, and drain beans.Transfer beans to clean bowl and mash them by hand or with a food processor until they reach the desired consistency. Add some water or low-fat sour cream if a creamier texture is desired. Set beans aside.Pour olive oil into a medium-sized skillet and heat oil on medium until crackling. (Note- olive oil is lower fat than all other cooking oils, but it does burn easily. Be careful about heating it too quickly.)Add bean mixture to crackling oil and cook until beans begin to spread out-2-3 minutes.Season beans spices complimentary to the type of beans (see above) to taste and let them bubble in the pan a few minutes longer. If refried beans stick to the sides of pan or form a crust on the top, they need to be stirred and/or the heat reducedWhen beans are desired texture and all oil is gone from the sides of the pan, beans are ready.
